Chorizo and tomato frittata

Eggs are probably the most versatile ingredient of all. They're good for breakfast, lunch or dinner, sweet or savoury and with so many permutations, you'll never tire of them. If you can't find chorizo, go for a salami or any spicy sausage. Add some sliced cooked potato with the tomato for extra carbs.

Ingredients

½ Tbsp Olive oil
1 bunch Spring onion, sliced
150 g Chorizo sausages, sliced
3 Tomatoes, chopped
6 Eggs, beaten

Directions

  1. Preheat the grill. Heat the oil in a frying pan and fry the spring onions and chorizo for two minutes.
  2. Add the tomatoes and a pinch of salt and stir well.
  3. Add the eggs and cook gently for five minutes until the base and edges begin to set.
  4. Put the pan under the hot grill and grill for two minutes until the egg is just firm to the touch.
  5. Serve with a salad.
