Dukkah is an Egyptian spice and ground nut mix. It is best known for being served with olive oil to dip bread in to. You can buy it pre-made, and there are many variations available, or you can quite easily make your own.
- In a dry frying pan toast fennel, coriander and cumin seeds, then grind in a mortar and pestle.
- Mix with toasted sesame seeds, chili flakes (optional), almonds and pistachios. Season to taste with salt and pepper.
- Makes approximately ½ cup. Stored in an airtight container, it will keep for 3-4 weeks.
