Chilli and red pepper jam

This colourful savoury jam is excellent with cheese and grills. Leave the seeds in the chillies if you want a really hot jam.

Ingredients

2 large Red peppers, seeded and diced
1 large Tomato, diced
1 large Red chilli, seeded and diced, use more if desired
1 Apple, peeled, cored & diced
1 cup White vinegar
¼ cup Water
2 cups Jam-setting sugar

Directions

  1. Place the capsicums, tomato, chillies, apple, vinegar and water in a heavy, stainless-steel saucepan.
  2. Simmer for 10 minutes. If you want a finer mix, blitz quickly with a hand blender.
  3. Stir in the sugar until it dissolves. Boil rapidly for four minutes. Remove from the heat and test for setting.
  4. Spoon into hot, sterilised jars and seal.
