Try this easy to prepare, colourful salad using Kerikeri oranges.

Salad

1 Avocado
2 Kerikeri oranges
3 Bacon rashers
1 handful Flat leaf (Italian) parsley
1 handful Rocket leaves

Dressing

2 Tbsp Olive oil
2 Tbsp Mustard
1 tsp Worcestershire sauce
1 Tbsp Vinegar
1 Orange
1 Lemon

Directions

  1. Cut an avocado and two Kerikeri oranges into cubes. Add 3-5 rashers of cooked bacon (cut into strips), the zest of one of the oranges, Italian parsley leaves, and a big handful of rocket.
  2. Make a salad dressing by shaking 2 tbsp mustard, 2 tbsp olive oil, 1 tbsp good vinegar, 1 tsp Worcestershire sauce, and the juice of an orange and a lemon in a jar. 
  3. Add a generous amount of dressing to the salad, season to taste and toss gently.
