Fish poached in coconut milk
( SERVES 4 )
- Sprinkle the fish with salt and lemon juice and set aside. Blend the chilli, garlic, onion and ginger into a fine paste.
- Mix the paste, coconut milk, turmeric and lemon grass in a pot and simmer very gently for 30 minutes until thickened.
- Add the fish steaks and cook for about 10 minutes or until cooked. Remove lemon grass stalk.
- If necessary, adjust seasoning and consistency before serving.
