Ingredients

1 tsp Sea salt
5 Dried chillies, chopped and soaked
1 Tbsp Galangal, finely sliced
3 Tbsp Shallots, finely chopped
1 tsp Shrimp paste
8 Garlic cloves, 5 whole, 3 chopped
75 g Pork mince
1 handful Fresh coriander, chopped
1 cup Tomato, sliced
2 Tbsp Cooking oil
3 Tbsp Water
2 Tbsp Sugar

Directions

  1. In a small food processor bowl, blitz the chillies, shallots, galangal, salt, garlic and shrimp paste. 
  2. Tip out into a glass mixing bowl, work in the pork mince and coriander. 
  3. In a wok, heat the cooking oil. cook the 3 cloves garlic, peeled and chopped. Add the pork mixture, then add 3 tbsp water and 2 tbsp sugar.
  4. Stir occasionally for five minutes, add the tomatoes, continue to cook for 10 minutes. 
  5. Remove from the heat and transfer to a bowl to cool.
