Rice, pork and vegetables with egg ribbons
Shaved Chinese pork is available from most supermarkets.
|½ tsp||Iodised salt|
|1 to taste||Ground black pepper|
|750 g||Dried flat rice noodles|
- Mix eggs, parsley, salt and pepper together in a small bowl. Heat oil in a small frying pan and cook egg mixture until almost set. Remove from heat.
- Cook rice 'n' veggies mixture to packet instructions. Drain well. Roll up egg omelette and slice finely. Wash spring onions and slice finely.
- Toss shaved pork and egg ribbons through rice mixture. Divide rice mixture between six bowls. Serve topped with spring onions and soy sauce.
