Smoked fish chowder

Smoked fish chowder

Ingredients

2 Onions
2 cloves Garlic
2 Potatoes
25 g Butter
¼ cup Flour
½ tsp Iodised salt
1 to taste Ground black pepper
3 cups Seafood stock
400 ml Coconut milk
480 g Smoked fish
1 Lemon
¼ cup Coriander pesto

Directions

  1. Peel onions and chop finely. Crush garlic, peel and chop finely. Peel potatoes and cut into small cubes. Heat butter in a large saucepan.
  2. Add onion, garlic and potatoes and toss for one minute. Sprinkle over flour, salt and pepper. Stir for one minute. Add prepared mustard and combine. Add stock and stir until boiling. Simmer for 10 minutes.
  3. Flake fish and add to soup with coconut milk and 2 teaspoons grated lemon rind. Simmer for five minutes. Serve hot garnished with coriander pesto.
