Lemon and caper stuffed chicken

Ingredients

2 Chicken breasts
½ cup Breadcrumbs
2 Tbsp Parsley
2 Lemons
2 tsp Capers
1 to taste Ground black pepper
1 tsp Lemon pepper
1 Broccolini
1 to serve Relish

Directions

  1. Cut a pocket in the side of each chicken breast (skinned and boned).
  2. Mix fresh breadcrumbs, chopped parsley, 1 tablespoon lemon rind, drained capers, 2 tablespoons lemon juice and pepper together. Fill each pocket with stuffing mixture. Sprinkle with lemon pepper.
  3. Place chicken in a baking dish. Cover and bake at 180 degrees C for 20 to 25 minutes. Slice and serve with steamed broccolini and red pepper relish.
