Spicy nut-topped lamb racks
( SERVES 4 )
- Place lamb racks on a board. Remove any excess fat and trim off silver skin. Heat a frying pan. Add cumin and cardamom seeds. Toss for one minute or until seeds smell fragrant.
- Mix in garlic salt and paprika. Chop cashew nuts finely and add with parsley and oil to spice mixture. Stir to combine. Press nut mixture over the top of the lamb racks. Place racks in a baking dish.
- Bake at 180 degrees C for 30 minutes. Rest for 10 minutes before cutting. Serve with vegetables.
