Florentine eggs

Traditional eggs Florentine are served with hollandaise sauce, which is loaded with saturated fat. our avocado drizzle is a healthier option.

Ingredients

350 g Frozen spinach
8 Chicken pieces
4 Eggs
2 English muffins

Avocado Drizzle

1 Avocado
½ tsp Garlic salt
2 drops Tabasco sauce
3 Tbsp Lemon juice
¼ cup Avocado oil

Directions

  1. Thaw spinach. Place in a saucepan over a low heat or microwave until hot. Grill chicken rashers, turning often. Heat a frying pan of water until simmering. Break eggs into pan and poach for five minutes.
  2. Grill cut muffin halves until golden. Divide spinach among four muffin halves. Place an egg on top of each spinach portion and serve with chicken rashers. Drizzle with avocado drizzle.
  3. To make the avocado drizzle: Peel avocado and remove stone. Place in a blender or food processor with garlic salt, Tabasco sauce, lemon juice and avocado oil. Blend until a smooth sauce consistency.
