Florentine eggs
( SERVES 4 )

Traditional eggs Florentine are served with hollandaise sauce, which is loaded with saturated fat. our avocado drizzle is a healthier option.
Ingredients
350 g | Frozen spinach |
8 | Chicken pieces |
4 | Eggs |
2 | English muffins |
Avocado Drizzle
1 | Avocado |
½ tsp | Garlic salt |
2 drops | Tabasco sauce |
3 Tbsp | Lemon juice |
¼ cup | Avocado oil |
Directions
- Thaw spinach. Place in a saucepan over a low heat or microwave until hot. Grill chicken rashers, turning often. Heat a frying pan of water until simmering. Break eggs into pan and poach for five minutes.
- Grill cut muffin halves until golden. Divide spinach among four muffin halves. Place an egg on top of each spinach portion and serve with chicken rashers. Drizzle with avocado drizzle.
- To make the avocado drizzle: Peel avocado and remove stone. Place in a blender or food processor with garlic salt, Tabasco sauce, lemon juice and avocado oil. Blend until a smooth sauce consistency.
