Ingredients

4 pieces Iceberg lettuce
15 g Bean sprouts
80 g Instant noodles
2 Spring onions
1 Chicken breast
15 sheets Rice paper
¼ cup Roasted peanuts
¼ cup Hoisin sauce

Dipping Sauce

¼ cup Soy sauce
1 Tbsp Hoisin sauce

Directions

  1. Slice lettuce leaves finely and combine with bean sprouts. Place noodles (oriental style) in a bowl. Pour over boiling water and leave for two minutes. Drain. Rinse under cold water. Wash spring onions and slice lengthways into long shards. Slice cooked chicken finely.
  2. Place a rice paper wrapper into a bowl of warm water until just soft. Remove from the water. Place a small portion of noodles, lettuce mixture, spring onion, chicken slices and chopped peanuts on each wrapper. Top with a teaspoon of hoisin sauce. Fold sides and ends of wrap over to form a parcel.
  3. Place on a serving dish and cover with a clean, damp tea towel. Repeat with remaining wrappers and ingredients. Serve with dipping sauce.
