Chilli, lime, pork and pepper stir-fry
( SERVES 2 )
- Crush garlic, then peel and chop finely. Place in a nonmetallic bowl with 1 tablespoon lime rind, lime juice and brown sugar. Cut chilli in half lengthways and remove seeds. Chop flesh finely and add with fish sauce to garlic mixture.
- Remove any fat from pork and slice pork finely. Add to garlic mixture and combine well. Wash courgettes and slice. Cut peppers in half, remove seeds and slice peppers finely.
- Heat oil in a wok or frying pan. Quickly cook pork in batches. Remove from pan. Stir-fry vegetables and, when just cooked, return pork to pan. Toss until hot.
