Pumpkin, kumara and walnut patties with feta and avocado

Pumpkin, kumara and walnut patties with feta and avocado

Ingredients

2 Tbsp Oil
3 Shallots
1 tsp Ground cumin
1 tsp Paprika
½ cup Walnuts
2 Kumara
450 g Pumpkin
1 tsp Iodised salt
1 cup Breadcrumbs
2 Avocados
160 g Feta
½ cup Peach relish

Directions

  1. Peel shallots and chop finely. Add oil to a frying pan and cook shallots until soft. Stir in cumin, paprika and walnuts. Peel kumara and pumpkin and chop roughly. Bring a large saucepan of water to the boil. Add salt and cook pumpkin and kumara pieces until soft. Drain well. Cool.
  2. Wash and combine with shallot mixture. Measure half cups of mixture and form into patties. Roll patties in breadcrumbs and refrigerate for 60 minutes or longer. Place on a greased baking tray. Spray or brush with oil. Grill both sides until golden.
  3. Cut avocados, remove stones and peel. Chop avocado roughly. Serve patties with avocado, crumbled feta and peach relish.
