Miso fish with udon noodles
Serves 4 5 tbsp miso paste 5 cups water 2 tbsp light soy sauce 250g broccolini, trimmed, or broccoli florets 600g (4) white fleshed fish fillets, such as snapper 400g udon noodles 1 to 2 small chillies,
- Place miso paste, water and soy sauce in a large saucepan and bring to the boil. Add broccolini and simmer for 2 to 3 minutes.
- Add fish fillets and simmer for 2 to 3 minutes. Add udon noodles and simmer for another 2 minutes.
- To serve, arrange noodles, fish and broccolini in bowls and pour over miso broth. Serve with sliced chilli to taste.
Tip: Miso paste is a Japanese ingredient made from fermented soya beans. It's a healthy, alternative way to make a broth for this fish and noodle dish. It is also used in soups, sauces, dressings and as a seasoning.
