Smoked chicken salsa pita pockets

- To make the smoked chicken salsa, finely dice smoked chicken and combine with finely diced fresh pineapple and juice, herbs (chopped fresh parsley, chopped fresh basil) , chopped red chilli with seeds removed, finely chopped with seeds removed red pepper and olive oil. Season with salt and pepper and toss well.
- Line each pita half with a lettuce leaf and fill the cavities with some smoked chicken salsa.
