Smoked fish avocado salad with lemon dressing

Smoked fish avocado salad with lemon dressing

Ingredients

2 Avocados
600 g Smoked fish
1 punnet Cherry tomatoes
150 g Baby rocket

Dressing

1 cup Sour cream
1 Lemon
1 to taste Salt & freshly ground pepper
2 Tbsp Fresh dill

Directions

  1. Toss smoked fish, skin and bones removed, peeled and sliced avocado, cherry tomatoes and rocket leaves together and arrange in a serving bowl.

To prepare the dressing:

  1. Stir sour cream, lemon zest of a lemon and 1 tbsp lemon juice and chopped fresh dill together to form a smooth dressing. Season with salt and pepper to taste. Serve dressing on the side to dollop over salad.
