Moroccan sausages

Ingredients

1 Tbsp Olive oil
600 g Sausages, (8 small)
2 Onions, sliced
1 Tbsp Fresh ginger, grated
2 cups Chicken stock, (liquid)
½ tsp Mixed spice
⅔ cup Dried apricots
1 tsp Ground coriander
1 tsp Ground cumin
½ tsp Ground turmeric
1 Salt & freshly ground pepper, to season
¼ cup Fresh coriander, chopped

Directions

  1. Heat a frying pan, add oil and sausages, then cook to brown all over. Add onion to the pan and cook over a medium heat for 5 minutes to soften.
  2. Add grated ginger and dry spices and cook for 1 minute more. Add apricots and chicken stock, then simmer very gently for 1 hour.
  3. Stir in coriander and season with salt and pepper to taste. Serves 4.

Tip: With this method, the one pot can cook either on the stovetop or in the oven - but the key is to keep the heat down so that the food just simmers. Simmering has the effect of gently extracting and blending the flavours of the foods that are in the pot.
