Butter to grease cake tin 2 tbsp ground almonds 2 eggs ¹/³ cup milk 1 cup caster sugar Finely grated zest of 1 lemon 1 tsp vanilla essence 1 cup flour, sifted ¼ cup ground almonds 1 tsp

Ingredients

2 Tbsp Ground almonds
2 Eggs
⅓ cup Milk
1 cup Caster sugar
1 Lemon, finely grated zest
1 tsp Vanilla essence/extract
1 cup Flour
410 g Pears, in juice, drained & cut in eighths
1 tsp Baking powder
¼ cup Ground almonds

Directions

  1. Heat oven to 180degC (160degC fan bake). Generously grease a 22cm cake tin with butter and dust with first measure of ground almonds.
  2. Place eggs in a bowl and whisk lightly, then whisk in milk, sugar, lemon zest and vanilla to combine. Stir in flour, almonds and baking powder to combine. Fold in pears and pour mixture into prepared cake tin.
  3. Bake for 35 to 40 minutes or until a skewer inserted comes out clean. Remove to a wire rack to cool.
