Real hot chocolate with homemade marshmallow foam
Homemade marshmallow foam
- Combine chocolate, cream and milk in a small saucepan and simmer gently, stirring until chocolate melts.
- To make the marshmallow foam, place water, sugar and cream of tartar in a small saucepan and bring to the boil, stirring until sugar dissolves. Simmer until the mixture thickens to form a syrup (this will take a few minutes).
- Place the egg white in a bowl and beat with an electric mixer until peaks are stiff but not dry. While beating continuously, slowly pour the syrup into the egg white.
- Once the egg-white mixture is combined, beat on a high speed for 5 minutes until it is foamy and white, like soft marshmallow. Pour the hot chocolate into cups and spoon a large dollop of marshmallow on top of each cup.
