Maple roast pork and apples
( SERVES 4 )
Use apples such as gala or golden delicious that will hold their shape when cooked.
- Heat oven to 220C. Heat a little oil in a non-stick frying pan. Season the pork fillet all over with salt and pepper and brown on both sides in the hot pan.
- Transfer pork to a lightly oiled roasting pan. Scatter apple slices around the pork. Drizzle pork and apples with maple syrup and roast for 15 minutes or until pork is cooked to your liking.
