400g fresh salmon fillet, skin and bones removed 200g cream cheese, softened Juice of 1 lemon Salt and freshly ground black pepper A few sprigs of fresh parsley Lemon wedges, to serve Wholemeal toast,
- Place the fresh salmon fillet, skin and bones removed in a dish, partially cover and microwave for 5 minutes to cook. Remove to cool. Break up cold salmon with a fork.
- Place softened cream cheese in a bowl and beat until smooth then beat in the salmon and lemon juice of a lemon. Season with salt and pepper to taste.
- Spoon paté into individual ramekins and garnish with a sprig of parsley. Serve with toast and with lemon wedges on the side to squeeze over.
