Stir-fry, asparagus and tofu
- Place 2cm tofu cubes in a bowl with soy sauce, then toss well and leave to marinate for 1 hour. Remove tofu and reserve the marinade.
- Heat a wok or large frying pan, add a little vegetable oil and stir-fry tofu in two batches, tossing regularly over a high heat for 3 to 4 minutes until browned all over. Remove to one side.
- Add the red pepper, sliced with seeds removed and asparagus,trimmed and halved to the frying pan (in two batches if necessary) and stir-fry them with a little oil over high heat for 3 to 4 minutes, tossing regularly.
- Return all ingredients to the wok along with the reserved tofu marinade and sweet chilli sauce. Toss well to combine. Scatter with chopped coriander and serve immediately.
