Pair this luscious compote with yoghurt, cream or meringues.
- Place sugar, water and vanilla in a saucepan and bring to the boil, stirring until sugar dissolves. Simmer for 10 minutes.
- Add apricot (halved with stones removed) and simmer for a further 10 minutes, until apricots are soft and the mixture is thick. Remove to cool.
- Serve apricot compote with meringues (Store-bought meringues), to serve, if desired.
