BBQ butterflied pork with nectarine salsa
Using just a few ingredients you can whip up an impressive summer time meal.
- Heat a barbecue or chargrill pan. Brush pork with a film of oil and season with salt and pepper.
- Cook over a medium heat for 4 to 5 minutes on each side (depending on thickness of steaks) until browned and cooked through.
- At the same time, make the salsa. Combine nectarines, chilli, juice of 2 limes and coriander in a bowl. Season with salt and pepper and toss well. Serve on top of pork.
