Marbled chocolate vanilla slice
150g butter, softened; 3/4 cup caster sugar; 2 tsp vanilla essence; 2 eggs, lightly beaten; 1 2/3 cups self-raising flour, sifted; 1/2 cup milk; 3 tbsp cocoa powder

- Heat oven to 160 degrees C fan bake. Grease a 17 x 27cm slice tin and line with nonstick baking paper with an overhang on all sides. Place butter and sugar in a large bowl and beat until the mixture is pale and creamy.
- Beat in vanilla and lightly beaten eggs, one at a time. Fold in sifted flour alternately with milk, mixing just enough to combine. Divide mixture evenly between two bowls. Sift cocoa over one bowl of mixture and stir to combine.
- Place alternating spoonfuls of chocolate and plain mixture into the prepared tin. Using the tip of a blunt knife, make swirls in the mixture. Bake for 30 minutes or until a skewer inserted in the centre comes out clean.
- Leave slice to cool in the tin before turning out and icing. To make icing, place the sifted cocoa powder and icing sugar, softened butter and boiling water in a bowl and beat together until smooth and creamy.
