Fruit health loaf

Ingredients
¾ cup | Raw sugar |
1 cup | Bran flakes |
¼ cup | Dried apricots |
¼ cup | Dates |
¼ cup | Dried cranberries |
1⅓ cups | Low-fat milk |
1½ cups | Self raising flour |
⅓ cup | Walnuts |
Directions
- Place bran flakes, sugar and chopped dried fruit in a bowl. Cover with the milk and leave to soak for 15 minutes.
- Heat oven to 160 degC fan bake. Grease and line a standard loaf tin or two small loaf tins with nonstick baking paper.
- Stir flour and chopped walnuts into the bran and fruit mixture. Pour mixture into a prepared loaf tin or tins.
- Bake a standard-size loaf for 45 to 50 minutes or until a skewer inserted comes out moist but clean. Bake small loaves for 30 to 35 minutes. Transfer to a wire rack to cool.
