Goan fish curry
|1 tsp||Ground cumin|
|1 tsp||Ground turmeric|
|2 cm||Fresh ginger|
|1 Tbsp||White wine vinegar|
- Combine all the chilli paste ingredients in the bowl of a mini food processor or spice mill and process to form a fairly smooth paste.
- Heat the oil in a large casserole dish, add the sliced onions and cook gently over a medium heat for 10 minutes until softened and lightly browned.
- Add the chilli paste and fry for 2 to 3 minutes, stirring continuously. Add the juice of 2 limes (or one lemon) and 1/2 cup of cold water, then stir to combine.
- Add the cubed fish and stir to coat in the sauce. Simmer for 5 minutes to cook the fish. Adjust seasoning with salt to taste. Serve with lime halves on the side, to squeeze over.
