Herb and feta stuffed mushrooms
- Heat oven to 180degC. Remove stalks from large field mushrooms and chop. Place chopped stalks in a bowl with remaining ingredients (olives pitted and all chopped), season with salt and pepper and toss well to combine.
- Spray or brush mushrooms with a little oil and place on a baking tray. Spoon the cubed feta mixture into the mushrooms to stuff.
- Bake for 15 to 20 minutes or until mushrooms and filling are sizzling hot and golden brown.
