Kumara and sausage stew
Looking for an inexpensive, healthy meal that's satisfying and tastes great? While not short on flavour or nourishment, here's a cheap and filling all-in-one meal solution to keep your family happy, healthy
- Place sausages in a saucepan, then cover with cold water and bring to the boil. Turn down the heat and simmer for 5 minutes to partially cook. Drain and slice the sausages on an angle into 4cm-long pieces.
- Heat oil in a saucepan, add the sliced leek and cook over a medium heat for 5 minutes, until softened but not browned.
- Add kumara, soup mix and water, then stir to combine. Cook over medium heat for 10 minutes or until kumara is just tender.
- Add peas and simmer for 5 minutes more. Adjust seasoning with salt and pepper to taste. Sprinkle with parsley and serve.
