Baked Salmon with Sundried Tomato Sauce
A quick and simple way to jazz up salmon fillets for a barbecue or summer meal.
Sun-dried Tomato Sauce
- Bring salmon to room temperature by leaving on the kitchen bench for 30 minutes. Heat oven to 220 degC. Place salmon in a roasting pan lined with baking paper, drizzle with a little olive oil and season with salt and pepper.
- Roast for 15-20 minutes, until salmon is browned and cooked to your liking. Top each portion with one tablespoonful of sun-dried tomato sauce and serve with lemon wedges on the side to squeeze over.
- To make the tomato sauce, place all of the ingredients in a food processor and process to purée. Season with salt and pepper to taste.
