Sweet corn fritters
- Place half the sweetcorn, the eggs, lemon juice of a lemon and self raising flour in the bowl of a food processor.
- Process to combine then transfer mixture to a bowl and stir in the remaining sweetcorn kernels. Stir in the chopped coriander.
- Heat a shallow amount of oil in a frying pan over a medium heat. Cook heaped teaspoons of the batter, in batches, for 1 minute on each side, or until crisp and golden brown.
- Drain on paper towels. Serve fritters hot with the sauce.
