Mini cornmeal cheese muffins
- Heat oven to 210C. Mix together oil, beaten egg, yoghurt and sweetcorn. Stir in cheese, parsley, bacon and onion.
- In a large bowl, stir together cornmeal, flour and baking soda. Add the wet mix and stir just enough to combine.
- Spoon the mixture into the prepared pans. Bake for 15 to 20 minutes or until puffed and golden brown. Serve warm.
