Salmon with cranberry soy glaze
½ cup whole cranberry sauce 3 tbsp dark soy sauce 2 tbsp grated fresh ginger 4 x 150g portions fresh salmon fillet, skin and bones removed Salt and freshly ground black pepper 1. Heat oven to 200°C.
- Heat oven to 200 degC. Place cranberry sauce and dark soy sauces and grated fresh ginger in a small bowl and stir to combine.
- Place fresh salmon fillet, skin and bones removed portions in an oven pan and season with salt and pepper. Spread the cranberry soy glaze all over the surface of the salmon portions.
- Roast salmon for 15 minutes or until golden brown and cooked to your liking. Serve with plenty of fresh vegetables for a healthy balanced meal.
