Salmon spiral bake
300g pasta spirals 1 cup low-fat sour cream 2 cloves garlic, chopped 4 spring onions, chopped 210g can salmon, drained and flaked Salt and freshly ground black pepper 4 small tomatoes, sliced 2 tbsp dry
- Heat oven to 200 degC. Cook pasta in plenty of boiling salted water for 8 to 10 minutes or according to packet instructions until just tender to the bite.
- Drain pasta well and transfer to a bowl. Stir in sour cream, garlic, spring onions and flaked salmon. Season with salt and pepper and gently toss to combine.
- Spoon mixture into four greased individual oven-proof dishes. Arrange a few slices of tomato over each and scatter with breadcrumbs. Bake for 15 minutes, or until hot and golden brown.
