Red salmon dip
- Place cream cheese in a bowl and beat until smooth. Remove any bones from the salmon and then beat salmon with cream cheese to combine.
- Mix in lemon juice of 1 lemon, basil pesto and chopped fresh parsley. Season with salt and pepper, to taste. Pack into a small bowl, cover and refrigerate until ready to serve.
- Garnish with a sprig of parsley. Serve with pita bread wedges or crackers on the side, to dip.
