- Heat oil in the clean saucepan. Add the onion and cook for five minutes to soften. Add the garlic and cook for one minute more.
- Add the wine and simmer for five minutes to reduce. Add potatoes, chopped tomatoes, tomato paste and water. Simmer for 10 minutes.
- Add calamari to the pan. Add paprika and season with salt and pepper. Simmer for five minutes to cook calamari. Serve topped with chives and with crusty bread on the side to mop up the juices.
Calamari (squid) rings can be purchased frozen and then thawed at room temperature (and drained on paper towels) before cooking.
