- Combine sugar, water, zest and juice from one lemon in a saucepan. Bring to a boil then reduce heat and simmer for five minutes.
- Add peaches to the pan, making sure they are covered in liquid. Simmer for 10 minutes until peaches are just tender.
- Remove peaches to cool in liquid. Store covered in the fridge for up to three days. Serve with cream, yoghurt or ice cream, as desired.
