Yummy tomato meatballs
- Combine mince, onion, breadcrumbs, oregano (or parsley) and egg (lighlty beaten) in a bowl and season well with salt and pepper. Mix together, pounding the mixture with your hand for a couple of minutes (this will help the meatballs hold together when cooked).
- With damp hands (to stop the mixture sticking) shape mixture into 20 balls. Heat oil in a nonstick fry pan, add meatballs and cook, turning regularly until browned all over.
- Pour tomatoes over meatballs and simmer for 10 minutes. Adjust seasoning with salt and pepper, if necessary, and serve.
