Fish and olive filo parcels
- Preheat oven to 200 degC. Place filo in four stacks of 3 sheets, brushing oil between each layer.
- Place a fish fillet at one end of the filo and cover with sliced mushrooms and a dollop of olive pesto. Fold in the sides of filo and roll into a package.
- Place the parcel seam-side down on a greased oven tray. Brush with oil and sprinkle with almonds.
- Bake for 12 to 15 minutes or until golden and cooked.
