Pan fried fish with lentils
( SERVES 4 )
- Heat 2 tablespoons of oil in a frying pan and gently cook onion and garlic until tender. Add capers and olives and cook a further 2 minutes. Lastly stir through tomatoes, lentils and the chopped parsley.
- Dust fish with flour seasoned with salt. Heat remaining oil in a frying pan and pan fry fish for 2 or 3 minutes on each side until just cooked.
- Serve with lentils on the side.
