Caramelised apples on spicy fruit toast
( SERVES 4 )
- Melt butter in a saucepan. Cut quarter pieces of apple into 3 wedges. Add these to the melted butter.
- Add cinnamon and vanilla paste to apples. Cook on low heat for 2 minutes.
- Drizzle maple syrup over apples. Cook for 3 minutes. Remove from heat. Stir gently and set aside.
- Toast spicy fruit bread.
- To assemble, place toasted spicy fruit bread onto 4 plates. Top with apple mixture and divide yoghurt between the 4 servings. Serve while hot.
