Chilli prawns with almond rice salad
|¼ cup||Fresh coriander|
|1 tsp||Ground cumin|
|1 to taste||Salt|
- Rice salad: Cook rice according to packet directions. Drain well. Mix roughly chopped salad ingredients through rice.
- Salad dressing: Make dressing by placing ingredients in a small screw-top jar. (Use 3 tablespoons of lemon juice and 1 teaspoon zest). Shake to combine well.
- Chilli prawns: Heat butter in a frying pan. Add crushed garlic, finely chopped chilli (with seeds removed) and prawns. Toss often until prawns are pink and cooked through. Stir dressing through rice and serve with chilli prawns.
