Ingredients

25 g Butter
2 Tbsp Golden syrup
1 cup Flour
1 tsp Baking soda
2 tsp Ground ginger
¼ tsp Salt
¼ cup Brown sugar
1 Egg
½ cup Milk
¼ cup Glace ginger

Directions

  1. Preheat oven to 200 degC. Place gem irons in the oven to heat. Melt the butter and golden syrup together until warm.
  2. Sieve the flour, baking soda, ginger and salt into a bowl. Add the sugar and stir until blended.
  3. Beat egg and milk together in a separate bowl and add to the dry ingredients with the butter and syrup. Mix until combined.
  4. Lift the gem irons from the oven and carefully grease with butter. Place large spoonfuls of mixture into gem irons and sprinkle with chopped ginger.
  5. Bake for 12 minutes until gems are springy to touch. Allow to cool on a wire rack.
