Barley, Spinach & Mushroom Pilaf
Pilaf (also known as pilau and plov), is a dish in which rice is cooked in a seasoned broth. Here's a delicious pilaf made with barley instead of rice.
- Heat oil in a large saucepan and gently cook onion and garlic until tender.
- Add mushrooms, barley and thyme and stir to coat with oil.
- Add stock and bring to the boil. Turn down the heat, and simmer, covered, for 1 hour or until barley is tender and the liquid is absorbed.
- Stir through spinach leaves and serve sprinkled with the slivered almonds.
Tip : Pilaf can be made with rice instead of barley, reducing cooking time to 20 minutes.
