Tempura is a delicious method of Japanese cooking. Make a batter and fry away and don't worry if the cooked tempura batter appears to have holes!

- Combine the flours, iced water and egg white in a bowl. Quickly whisk until just combined. Don't over-mix - a few lumps are fine!
- Heat 4 to 5cm of oil in a large, deep saucepan.
- Dip vegetables and white fish pieces into the batter, a few at a time, then quickly deep-fry them until batter is just crisp, which will only take a short time. Drain tempura on paper towels. Continue until all pieces are cooked.
- Combine the dipping sauce ingredients in a small bowl and serve with tempura.
