Flour-dipped fish with kumara wedges
- Preheat oven to 200 degC. Place kumara and oil in a baking dish and sprinkle with salt. Bake for 15 to 20 minutes or until cooked and golden, turning wedges during cooking time.
- Cut fish fillets into long pieces. Mix rice flour, lemon juice and soda water together until ingredients form a smooth batter.
- Dip each fish fillet into batter. Add to hot oil and fry until cooked through and golden. Stir batter before adding each fish fillet.
- Serve fish and kumara wedges with salad and tartare sauce.
