Grissini with fennel seeds
We all love parties, but when it comes to actually throwing them, enthusiasm can quickly wane, especially when you're faced with catering. This is a tried-and-true recipe that will get you through any party with ease.
- Place warm water, yeast and sugar in a bowl and stir lightly. Leave for 5 minutes until frothy.
- Combine, flour, fennel seeds and salt in a bowl and make a well in the centre. Pour in yeast and olive oil and mix well.
- Tip dough onto a lightly floured surface and knead until smooth and elastic. Place dough in an oiled bowl and cover. Sit in a warm spot for approximately 1 hour or until doubled in bulk.
- Preheat oven to 220 degC. Lightly knead dough and then pinch off walnut-sized balls. Roll into sticks 14cm x 1cm. Brush with water and sprinkle with sea salt flakes. Place on a baking tray and bake for 15 minutes, until golden and crisp.
Tip: Grissini can be coated with seeds, eg sesame or poppy, prior to cooking. You may like to twist smoked salmon around one end of each one after cooking.
