Spinach rice bake
- Cook rice in boiling, salted water for 12 minutes. Drain well and transfer to a bowl. Preheat oven to 180 degC. Grease an ovenproof dish with butter.
- Heat oil in a saucepan and cook finely chopped onion and garlic over a medium heat until softened. Add to the rice along with the chopped fresh mint. Squeeze excess moisture from the thawed spinach and add to the rice. Mix to combine.
- Beat eggs and milk together, then mix in cheese. Combine cheese mixture with rice. Season well with salt and pepper. Pour into prepared oven dish. Bake for 30 to 35 minutes or until mixture is firm and set.
