Popcorn chicken is great as a starter or for a contribution to a shared meal. It makes a great treat for the kids on the weekend.
- Place skinned chicken in a shallow dish with the soy, grated ginger, chopped garlic and sesame oil. Refrigerate for 2 hours.
- Combine cornflour, flour, and salt and pepper to season in a shallow bowl.
- Heat oil to a depth of 5cm in a large saucepan. Dust the marinated chicken pieces with flour and deep-fry until coating is crisp and chicken is cooked through. Drain on paper towels.
- Serve the popcorn chicken garnished with curls of spring onion and soy sauce for dipping.
